Galinha à Manduca (Manduca's Chicken)

Ingredients:

- 1 chicken with giblets
- 1 onion
- 1 cup of rice
- chicken blood
- ½ cup of vinegar
- 1 tea spoon of salt
- 3 soup spoons of lard
- powdered chilli

1- Remove the chicken bones.

2- Fry the chicken giblets on the lard until golden. Then add 2 cups of water on the pot. When it starts to boil add the rice and the chicken blood mixed with a little bit of vinegar and salt.

3- Fill immediately the inside of the chicken with this mixture, sew the chicken and braise it until cook involved with lard and with a lot of chilli. If you prefer you can also roast this delicious dish in the oven. Enjoy!
