Arroz Verde (Green Rice)

Ingredients:

- 1 cup and a half of rice
- 2 soup spoons of oil
- 2 chopped onions
- 1 chopped green pepper
- 1 chopped garlic clove
- ½ cup of chopped coriander
- 3 cups of chicken broth
- salt and pepper

1- Wash the rice very well.

2- Heat the oil in a big pan and add the rice. Stir for a few minutes.

3- Add the onions, the green pepper, the garlic, the coriander, the salt and the pepper.

4- Stir and let it cook for a few minutes until the vegetables get smooth.

5- Add the chicken broth and let it boil. Then cover the pan and let it boil on the lowest heat possible until the rice is cooked.
